Of all the items in Pentargon's galley I'd never be without, number one is Rice Bran Oil
Another would be my Pressure Cookers followed by my Clam Pans and my Icelandic flat-iron griddle. One's gotta make pancakes and griddle cakes and toasties and steam-fried sausages and omelettes off-grid.
Next has to be my xPresso coffee percolator - plus hand-powered grinder, coffee beans, peppercorns, Demerara sugar.
I do like my morning coffee. Science did controlled experiments to gauge how fine a grind should be for a perfect brew. All my life I have followed the science but my choice of bean follows my nose. Someone somewhere told me the best coffee grows on the 4000meter line in equatorial mountain ranges. Unless a bag gives me that info it is filtered out of my shopping list. I like to grind in peppercorns with the beans and include fresh cardamom seeds picked from the pod as and when needed. Cardamom has special synergic properties in conjunction with real coffee and with black pepper promotes bowel efficiency, colon cleaning, gut biome and blood purification via the immune system. Pepper has anti-inflammatory and antibacterial properties which fight infection. My immune system likes all the help it can get as I've carried Chronic Fatigue Syndrome for over forty years? Adding pepper to my morning coffee is, at worst, a harmless ritual and at best, a powerful tool in my immune armoury. As for the cardamom it keeps my bowels working, along with a high fibre diet. Everything in moderation especially moderation!
In late 2022, the boat had Parsley Boxes stored aboard. Ready-prepared dinners with a use-by in late 2023 which I got on special offer early in 2022. I am rather particular about my food ... and you better believe it. I used up all of the packs and was well impressed. Knowing that food prepared for microwave may be eaten cold, I tried some 'uncooked' and can say the quality was very high, better than any prepared meals I previously tried and way ahead of anything from supermarkets.
The Hawkins pressure cooker is normally used as a very fast cooker but it can work just as well as a slow cooker
Softening large potatoes (prior to baking them!)
takes about 10 mins with a tbsp of water
with a tsp of oil per potato.
The large parboiled potato is then baked
at Gas7 200ºC for 30mins,
Oil ensures a nice glaze on the emerging baked spud
and the fact that the skin is oiled going in
means the heat is concentrated on the skin to brown it.
Large jacket potatoes will cook fully in two hours
on the hob at the lowest gas setting!
Either method minimizes cabin condensation
and frees up galley slaves for other duties. QED

White bread and white sugar are touchy subjects
and neither are found on Pentargon.

"All the engineers were berthed in the after lower mess deck in Haida, and below our mess was the dry provisions store. At least once a day one of the supply ratings would head on down there to make up the provisions on the victualling list. These people used to come on down to the stoker's mess, and open the hatch into their store room. They normally used to hang the padlock on the grab handle on the after bulkhead just above the hatch. We discovered that if we switched locks with an identical one, the supply rating left with his stock and simply snapped the lock on the hatch. When we knew he was gone, we used our key to open our lock, went down and made up our own victualing list [before restoring the original lock!]
Everyone one else on board knew that for the price of a few tots one could attend one of these scran-ups as guests of the stokers, and nosh up on fried mushrooms, bully beef and beans. All of these ill-gotten gains were secreted in the vent trunking in the stoker's mess. I often wonder if one was to visit the old mess today could we still find some tins of food hidden there.
