250g fatty beef mince 2 tbsp ricebran oil. 1 onion very finely chopped. 1 fresh carrot, peeled and finely diced. 1 green pepper, de-seeded and finely diced. garlic cloves peeled & finely chopped. 125g smoked bacon lardons. tbsp mixed dried herbs. 400g tin of chopped tomatoes. 300ml Red Wine Spritzer a generous tblsp of oatmeal to bulk the sauce. seasoning to taste.
Prepare Bolognaise sauce at least a day before use. Advance planning called for.
Ensure all the ingredients are to hand by having done your shopping in advance.
Heat a large non-stick frying pan or wok and add half the mince, cooking over a high heat to colour the meat. Break up lumps with the back of a fork.
When the first lot is well-browned,
add the rest of the mince and repeat.
ln another large pan, heat the oil to cook the onion, carrot and green pepper until they start to soften. Stir in the garlic, bacon lardons and herbs and cook for 2 minutes.
Stir in the tomatoes and the spritzer and optionally season well. Add the mince and simmer for maybe 45? minutes until thick
It is feasible to store the sauce in screwcap jamjars in winter but use within a few days

The sauce may be used for lasagnes, pastas and all sorts of ingenious recipes. On board it is sometimes used on its own as a meal.
